What You’ll Need
- 1–2 heads of broccoli (trim off browned ends, chop florets & stems)
- 1 medium onion, chopped
- 2–3 garlic cloves, minced
- 1 potato, diced (optional, but adds creaminess)
- 1 can chicken broth (about 1 ½ cups)
- 3 cups water
- 1 cup milk or cream
- 2 tbsp butter or olive oil
- 1–2 cups sharp cheddar cheese (the more, the merrier)
- Salt & pepper, to taste
- Pinch of nutmeg (optional, but magical)
How To Make It
1. In a big pot, warm up the butter or olive oil. Sauté your onion and garlic until fragrant and soft.
2. Add in chopped broccoli and potato. Stir and let everything get friendly for a few minutes.
3. Pour in the chicken broth and water. Bring to a boil, then simmer for about 15–20 minutes, until veggies are fork-tender.
4. Carefully blend until smooth.
5. Stir in milk/cream and that glorious mountain of cheddar cheese. Taste, season, and stir until silky.
6. Ladle into bowls, top with extra cheese, croutons, or even a swirl of cream.

Add crispy bacon bits for a smoky twist.
Stir in fresh herbs like thyme or parsley at the end.
Spice lovers — a pinch of cayenne or diced jalapeño turns this into broccoli cheddar with a kick.
