I Wanted Comfort Food… So I Gave Spaghetti an October Makeover

There are certain meals that don’t need an introduction.

You smell the sauce simmering. You hear something sizzling in the kitchen. Maybe there’s a little too much Parmesan involved.

And suddenly you know:

We’re having comfort food tonight.

For me, spaghetti has always belonged in that category.

It’s warm. It’s filling. It’s ridiculously easy to love. And there’s something about a big bowl of spaghetti covered in rich tomato sauce that feels like the food equivalent of putting on your favorite oversized sweater.

So when I got to Day 6 of my 31 Days of October Photo + Writing Challenge, today’s prompts fit together almost perfectly.

Writing Prompt: What’s a meal that feels like comfort to you?

My answer?

Spaghetti.

But because we’re in October…

I decided it needed a little fall magic. 🎃✨

Spaghetti… But Make It Fall

Instead of traditional pasta, I went with spaghetti squash.

And really, could there be a more appropriate October version of spaghetti?

It’s literally a squash that magically turns into noodles.

Okay, scientifically, I’m sure there’s a perfectly reasonable explanation for why the inside separates into spaghetti-like strands when it’s cooked.

But we’re calling it magic.

Once you scrape your fork through the roasted squash and those golden little strands start appearing, it genuinely feels like one of nature’s cooler tricks.

Top those strands with a hearty tomato and meat sauce, add Parmesan, herbs and a little seasoning…

Suddenly you’ve got something that feels like classic spaghetti while also tasting like it belongs on an October dinner table.

What Makes a Meal “Comfort Food” Anyway?

I’ve been thinking about that question.

Because comfort food isn’t necessarily the fanciest meal you’ve ever eaten.

Actually, I think it’s usually the opposite.

It’s familiar.

It’s warm.

It’s something you don’t have to think too hard about.

Comfort food is the meal you want after a long day when you’re tired and don’t want anything complicated. It’s the smell coming from the kitchen that makes you hungry before you’ve even seen what’s cooking.

It’s the kind of meal you sit down with and immediately think:

Yep. This is exactly what I needed.

And spaghetti has always had that feeling for me.

A Little Healthier Without Making Dinner Sad

Here’s the thing.

I love finding ways to make meals a little healthier.

But I absolutely refuse to believe that eating healthier means dinner has to become depressing. 😂

I still want sauce.

I still want seasoning.

I still want Parmesan.

I still want to finish dinner feeling like I actually ate something satisfying.

That’s why spaghetti squash works so well for this.

You still get that big, cozy bowl of “spaghetti.” You still get the rich sauce and all those Italian flavors.

But underneath it all are strands of roasted squash instead of traditional noodles.

It’s not pretending to be pasta.

It’s its own thing.

And it’s delicious in its own way.

There’s Something About Fall Dinners 🍂

Maybe it’s because the days are getting shorter.

Maybe it’s because we’re slowly trading bright summer evenings for candles, blankets and nights at home.

Or maybe I’m just looking for any excuse to make everything feel cozy in October.

Probably that one.

But dinner feels different this time of year.

I want warm meals.

I want roasted vegetables.

I want spices.

I want something simmering on the stove while a candle is burning nearby.

And if there’s a Halloween movie playing somewhere in the background?

Even better.

There is something so wonderfully ordinary about making dinner at home—and that’s exactly what I’ve been loving about this challenge.

Not every October memory has to involve a pumpkin patch, haunted house or big adventure.

Sometimes October looks like dinner.

Finding Magic in the Everyday

That’s really what these 31 days are becoming for me.

An excuse to notice things I normally wouldn’t.

My morning coffee.

A pair of shoes that have traveled with me.

The camera I use to capture my life.

Pumpkins sitting outside in the sunshine.

And now…

Dinner.

Things that might seem completely ordinary until you stop long enough to realize that these are the things actually making up our lives.

Maybe years from now I won’t remember every big event from this October.

But I hope I remember some of the little things.

The candles.

The coffee.

The open windows.

The Halloween movies.

The meals around the table.

The moments that didn’t seem particularly important while they were happening.

Because sometimes comfort isn’t something spectacular.

Sometimes it’s just a warm bowl of spaghetti squash covered in sauce and Parmesan at the end of a long day.

And maybe that’s its own kind of magic. ✨
